Wintzell's Gumbo
"According to DH, the world's best gumbo is served at Wintzell's Oyster House in Mobile, AL, so I was really excited when I received Alabama's "Thicket" magazine with the recipe for it inside. Wintzell's has been in business since 1938, was named in Willard Scott's All-American Cookbook for the Best Oysters and Crabs, and has been featured in Southern Living Magazine. I'll probably do a mixture of shrimp and oysters for the gumbo instead of using just oysters. If you're ever near Mobile, AL, Wintzell's is not to be missed!"

ingredients
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 1 stalk celery, diced
- 4 tablespoons lard
- 4 tablespoons plain flour, unsifted
- 2 garlic cloves, minced
- 4 bouillon cubes (beef or chicken)
- 3 quarts boiling water
- 1 quart oyster
- 1 tablespoon file powder
- salt and pepper
directions
- Sift flour; brown in lard to a golden-brown color, stirring constantly to prevent burning or lumping.
- Add half of the chopped onion, garlic, bell pepper, and celery and saute for one minute. Add this mixture to the boiling water and mix thoroughly.
- Add remaining onion, garlic, bell pepper, celery, and the bouillon cubes, and boil for 10 minutes.
- Add oysters and simmer for at least 30 minutes.
- Add salt and pepper to taste, bring to rapid boil and add filé powder. Mix well and remove from heat. Let sit for at least 15 minutes and serve over rice.

For taste you cannot beat Wintzell's gumbo but this recipe is not accurate. I found no oysters in my gumbo only shrimp ..the lack of okra is replaced by file' powder as a thickening agent... Very good gumbo for restaurant gumbo... Of course the best you can get is at my house ...lol. If a restaurant served gumbo like I make at home they would have to charge $15.00 a bowl... I use shrimp , oysters , real crab meat , scallops and snapper or flounder . I also use olive oil for my roux . I boil my shells to make my broth .. and I add okra to the recipe... good stuff

I enjoyed Wentzell's gumbo-inspired soup last week in Montgomery. It's very good but it's not gumbo: they don't include the okra.

I've lived in several different places (Mississippi, New York, Germany, Montana, Georgia) because my husband was a military officer, but we decided to make Alabama our home after his military career. I've worked for the US Postal Service for the past 15 years and love my job! I've been married for 27 years to my best friend and have beautiful twin daughters (pictured below). One is an art major and musician (she plays viola, guitar, piano, drums, and has the voice of an angel). The other is a French major, Starbucks barista, and ballet dancer, formerly with Ballet Magnificat and now an apprentice with the contemporary ballet company, Arova.

My biggest pet peeve? People who bash the Post Office. Given the resources it has the Post Office does a remarkable job. For less than 50¢ someone will come to your house, pick up a letter and deliver it to the other side of the country in a few days time. What a bargain! The majority of postal workers I know are dedicated hard-working employees who take pride in their jobs. Just like in any company/organization you will find some slackers but the reason so much is heard about bad service or bad employees in USPS is because the Post Office is one of the only agencies that touches every American's life. Anytime you have a service problem, instead of just complaining to your friends & family, ask to speak to the postmaster/station manager. If you don't get the result you want write a letter to your congressman. All congressional inquiries are promptly addressed. The fact is that most people find it easier to complain and do nothing rather than do what needs to be done to address the issue.
