Wonderful Homemade Chicken Noodle Soup

  • In Large soup pot melt butter. Add onion, celery, carrot,and garlic. cook till onions are translucent.
  • add water, 1 tb salt, pepper, stock, and chicken brests (raw) to pot. when chicken is fully cooked through remove from pot. on a cutting board shred chicken using two forks. like you would if you were shreding pork. add back to soup.
  • TO MAKE NOODLES: I do this on a sheet of tin foil makes clean up easier. Place flower and 1 tb salt on foil. Create a well in center of flower add egg. Using a fork incorporate egg into flower till becomes doe. (You may have to just get in there with your hands.) After doe no longer is wet or doesn’t stick to foil. Using a flowered rolling pin roll out till it is about a 1/8 of an inch thick. Cut into thin strips using a pizza cutter or butter knife. Then cut into 1" pieces. Add to soup one at a time, so they do not stick together. Cook for ten minutes.

  1. I saw this had no reviews, but decided to try it anyway. This was very good, flavorful. i had to double the recipe. One thing, it was too salty for my family, so I believe next time I will just cut down on the salt, but still a good quick and easy chicken soup. Thanks for sharing.
