Worlds Best Chicken Stir-Fry for Two

directions

  • Saute sliced chicken in hot oil until one side is cooked and then add white onion while turning chicken.
  • Cook until onions are very soft.
  • Toss in red and green peppers, mushrooms and green onion and continue sauteing over med/high heat.
  • Stir in Cilantro, garlic powder, ginger, salt and pepper.
  • (If you use a very salty soy sauce you might not want to add salt)
  • Continue cooking until red and green peppers are soft.
  • Once peppers are soft stir in Marsala wine and soy sauce, continue cooking over med/high heat until almost all of the liquid has evaporated and you are left with a thick sauce.
  • Pour over a bed of rice and serve.
  • NOTE*It is very important to keep cooking until nearly all of the liquid has evaporated because you want the flavor of the soy sauce and wine on the vegetables NOT on the plate in a puddle.
  • If you prefer extra sauce for the rice just use more soy sauce and wine but make sure you burn off most of the excess water or your dish will lack flavor and be too liquidy.
  • Adding a little extra olive oil will always help to thicken the sauce.
  • Enjoy.

  1. Very easy. Time to make as posted would work if and only if you have all the ingredients cut and premeasured. I followed directions only changing my ingredients and I added a splash of orange juice and used sesame oil instead ofolive oil. My husband immediately upon tasting it complimented on how good it was. I would recommend this recipe.

  3. This is a very flavourful, easy and delicious recipe. I doubled the recipe and used Chardonnay wine since it is all I had on hand. I also added some sliced celery and cabbage. I can see lots of possibilities with this recipe. Thank you for posting.

  5. This was great tweeked it a little used fresh ginger,garlic and cilantro also extra mushrooms and a small amount of bok - cho I did not have Marsala but I had Medara oh had and they are so close to the same ....it was yummy enjoyed it and will make again soon

Tweaks

  1. My husband coooked this last night it was really good. We substituted the soy sauce for teriyaki marinade and sauce and doubled the veggies. Then me and him like heat so we added some hot oil. It was very good!

I live in the food friendly town of Amherst, MA which has really peaked my interest in cooking. Being surrounded by such good food I found myself wanting to create some myself. However I don't eat red meat so you won't see any such recipes from me, however everything else is free game.
