World's Easiest Pancakes

"This recipe was given to me by my aunt before she died. It is the easiest pancake recipe I have ever seen, and they never fail to be light and fluffy."

  • Place all ingredients into a large mixing bowl, and mix for approx 2 minutes.
  • Pour into a hot non stick pan and cook until air bubbles form on one side. Flip and cook until done (do not press on pancakes too hard because they will shrink.).
  • Other variations include using all purpose plain flour with a small amount of bicarbonate soda, or substituting half the milk for a sweet lemonade.
  • Top with maple syrup or lemon and sugar mix.

  1. Really great, quick pancakes. I highly recommend them. I would however definitely add 2 Tbs of sugar to make them more tasty. They are also best fresh from the pan! Perfect for a quick breakfast, lunch, or even dinner with some bacon or eggs. ENJOY!
     
  2. I never thought pancakes could be so fluffy, that's why I've always preferred waffles . . til now ! My husband couldn't figure out how I did it ! My grandkids think I'm magical. The only thing I modified is adding a tsp of pure vanilla and fresh hand picked Alaskan blueberries. By the way, don't waste these pancakes with fake maple syrup, use the real stuff, you'll be glad you did ! Ooohhh, must go get the left over one I hid for dessert after my dinner :o)
     
  3. Very easy to whip together. I would however add more flavouring - possibly 2 tbs sugar or splenda and possibly some cinnamon to the mixture. I did add fresh blueberries to the batter.
