Ww Apple Cobbler

"My sister gave me this recipe. I believe she got it from a WW leader. Her note to me was that she substituted Splenda for the sugar and increased it to 1 cup. She didn't feel the 1/3 cup was sweet enough. For the apples she recommended Jonagold or any other baking apple. Her note also indicated 1 pt. per serving."

  • Preheat oven to 375°F
  • Spray an 8 x 8 inch baking dish with nonstick spray. Arrange the apples in the baking dish; bake until tender, about 15 minutes. (Alternatively, arrange the apples in a microwavable dish and microwave on high for 3 minutes or until the apples are tender). Let the apples cool, then stir in applesauce.
  • To assmeble the cobblers, reduce the oven temp to 350°F Spray six 4 oz. custard cups or ramekins with non-stick spray.
  • Combine the milk, flour, sugar, baking powder, vanilla, cinnamon and salt in a bowl and whisk until smooth.
  • Divide the apple mixture into the cups and top each with the batter. Bake cobblers until golden brown, about 20 minutes. If making a single, large cobbler, simply pour the batter over the apples and bake for 30 minutes. Serve warm.

  1. This was a nice dessert, more of a sponge topping than a cobbler really but tasty. It was even better reheated the next day and DH thoroughly enjoyed it too. I will try it with other fruits in season too. Thank you for posting the recipe.
     
  2. This was a great guilt-free use of some tangy apples from the farmer's market that DH decided he couldn't eat raw! I realized too late that I was out of applesauce, so I dotted the cooked apples with about 1 teaspoon of Smart Balance and sprinkled them with 1/2 teaspoon sugar and some cinnamon then stirred it all up. Worked great, and I was pleased to have that buttery flavor that I love in an apple pie. This comes out more like an apple cake than a cobbler (no crispy or biscuity crust here) but the spice mix is nice and it is quite tasty with a small dollop of vanilla frozen yogurt.   3. This met with mixed reviews at my house. I made it as written. The apple filling was very good. I used Granny Smiths and they were tender with just the right amount of sweetness. The cobbler part browned perfectly on the outside but had a sort of gummy texture that my family did not care for. I have never had much luck with calorie-reduced desserts, but I do appreciate the opportunity to give this a try. Thanks.
     
  4. I have the same recipe, also from a ww friend, but use a variety of fruits (especially raspberries or blueberries if available) along with the fuji apples - which are very sweet. I make one large cobbler in a 9x9 pyrex dish, and it serves 9. I also use more flour, though (1 cup). I also use splenda instead of sugar, and it is perfect. After laying the fruit on the bottom of the dish, I sprinkle cinnamon and splenda over it, and then pour the mixture on top. I make this recipe twice a week - couldn't live without it - I can't imagine having to run for a piece of chocolate when instead I run to this - fruits with a bit of flour. Thanks for posting, and I hope more people will try this recipe.

I'm a grandmother who loves having the grandkids around. My son is currently living with me (on a short term basis) so I get to see and spend time with his kids more than I ever had, and that's a great thing. I love trying new recipes and since I have found RecipeZaar, the new dishes have been streaming.
