- 1 (18 ounce) box carrot cake mix (I use pudding type)
- 1⁄2 cup crushed pineapple in juice
- 1⁄4 cup raisins
- 1⁄2 cup carrot (shredded)
- 1⁄3 cup unsweetened applesauce
- 3⁄4 cup Egg Beaters egg substitute
directions
- Combine all ingredients and mix thoroughly. Add to prepared Bundt pan and cook for approximately 40 minutes at 350. Check for doneness, it may need a little bit longer.
