  • Heat olive oil in a large stockpot over medium-high heat.
  • Add ground meat, salt and pepper.
  • When meat is browned, add garlic, onion, bell pepper and bay leaf.
  • Cook 7-8 minutes, or until veggies are tender. Stir in chicken broth/stock and tomatoes and bring to a boil.
  • Stir in rice, return to boil, then lower heat to a simmer.
  • Cover and cook 5 minutes.
  • Remove from heat; remove cover.
  • Fold in basil.
  • Remove bay leaf.
  • Plate and top with cheese.

  1. It is a little dry. There is something about the seasoning I don't care for. It may be the italian seasoning. IMO less of it would make it better I also used only two peppers instead of three.
     
  2. This is great! I followed recipe except I used turkey and a 14 oz can of diced tomatoes and two fresh tomatoes I had in the refrigerator instead of the crushed tomatoes. I agree that it was even better the next day. Thanks for posting!

  4. Made for Spring PAC 2008. We really enjoyed this. I did make some changes. I had precooked hamburger in the freezer so used that. I used a bag of frozen green peppers and minced onions. I cooked the veggies in the olive oil. I then added the cooked burger to warm it. I followed the rest of the recipe except I only used about 1/2 tablespoon of italian seasoning. I also didn't use basil. Hubby thought it had too much rice but he is not a huge rice fan. Everyone else thought it was perfect. This was a lot easier to make then stuffed peppers but still had a great taste.
     
  5. This was a good kick-off recipe, but I tweaked it some. I added twice as much chicken broth, omitted the Italian seasoning, and substituted uncooked barley for the brown rice. I'll definitely make this again!
