- cooking spray
- 1 cup corn flakes, crushed
- 1 large egg white
- 1⁄3 cup low-fat milk
- 1⁄4 cup all-purpose flour
- 3⁄4 teaspoon onion powder
- 1⁄2 teaspoon salt (to taste)
- 1⁄8 teaspoon cayenne pepper
- 1 large uncooked yellow onion, sliced 1/4 inch thick separated into rings
directions
- Preheat oven to 450°F.
- Coat a large rimmed baking sheet with cooking spray.
- Spread cornflake crumbs on large plate.
- Whisk together egg white, milk, flour, onion powder, salt and cayenne pepper in shallow plate.
- Dip onion rings in egg mixture (letting excess drip off) then dredge in cornflake crumbs, turning to coat.
- Place in single layer on prepared plan.
- Coat onion rings with cooking spray and bake, turning once, until onion rings are golden brown, about 12 minutes.
- Sprinkle with additional salt and pepper before serving, if desired.

Evidently I am not a star at breading onion rings. But the coating tasted really good. It didn't specify how fine to crunch up the corn chips so I left mine rather chunky, it didn't work out so well. I would try this again, but I would crush the flakes finer and also cut the onions a little thicker. They ended up a bit limp. Made for PAC Spring 2013.
