Ww Friendly Chicken Fried Rice

"I was craving fried rice, but I wanted something that was lowfat and weight watching friendly, so I came up with this. I used leftover rotisserie chicken, but any cooked chicken breast would work. I use steamfresh frozen brown rice. Doublecheck it - but approx 7 pts for the whole thing, 4 pts per serving (2 servings)"

  • cook up the scrambled eggbeater and set aside.
  • saute the carrots & onions until tender in a nonstick pan sprayed with cooking spray(about 5 minutes)
  • Add 1 tsp of olive oil to the pan & let it heat up a bit.
  • add the rice, peas and egg.
  • Add the diced/shredded chicken.
  • Add soy sauce to taste.
  • If you want it spicier, add a little thai chili sauce or red pepper.
