Ww Garlic-Ginger Chicken and Potatoes - 4 Points

"This is another great dish that I have tried from my WW cookbook called "Simply the Best". Peggy from Pasadena, California sent this one in. I have it down as "Very good" Hope you enjoy. Marinade time is included with the preparation time."

  • To prepare the marinade, in a a gallon-size seal able plastic bag, combine the cilantro, vinegar, soy sauce, ginger and garlic' add the chicken,.
  • Seal the bag, squeezing out the air; turn to coat the chicken,.
  • Refrigerate 30 minutes.
  • Preheat the oven to 350 degrees.
  • Spray a 10X6 baking pan with nonstick cooking spray.
  • Transfer the chicken and marinade to the pan; add the potato.
  • Bake, covered, until the chicken and potatoes are partially cooked, about 15 minutes longer.
  • Uncover and bake until the chicken is cooked through and the potato is tender, about 15 minutes longer.
  • Serve the chicken and potato, spooning any remaining pan juices over the chicken.

  1. I know that I'm an easy grader BUT to me this is worth all 5 start as my DH ate it with gusto and cleaned his plate!! I used 3 thin slices of ginger and pulled it out after cooking so he wouldn't see it and we both loved it. I might add that we're currently in a real heat wave and the last thing I want to do id use the oven. I cooked this, covered, on the top shelf of the outdoor grill with the lid down. Took the foil off for about the last 10 mins. Oh yeah, and I used a large baking potato diced.

  3. Next time I will add more ginger... I could hardly taste it. It was a very moist chicken and easy. I used 3 small red potatoes. Made for 1-2-3 Hits Tag Game 2010.

Overall very good, my 4 chicken breasts weighed between 7 1/4 and 8 ounces so allowed 45 minutes cooking time for them and used 4 medium potatoes cut into quarters (should have cut smaller as even after an hours cooking they were still a little raw but the chicken was becoming too dry, so we served). I did use parsley instead of cilantro/coriander as we don't like it and overall the meal was enjoyable. I was surprised at the DM eating the potatoe wedges as normally she will not eat potatoes with skin on. Thank you TereseS, one we will try again, made for Please Review My Recipe.
