  • Preheat oven to 400 degrees fahrenheit.
  • Bake potatoes at 400 degrees for 1 hour and 15 minutes or until tender. Let cool slightly.
  • Melt margarine in a nonstick skillet over medium-high heat. Add broccoli and onion; saute' 3 minutes. Add broth; bring to a boil.
  • Cover, reduce heat, and simmer 5 minutes or until broccoli is tender. Remove from heat; stir in ham and pepper.
  • Cut a lengthwise strip from top of each potato; discard strips. Scoop out pulp, leaving 1/4 -inch-thick shells; set shells aside.
  • Place potato pulp in a bowl; add 2 tablespoons sour cream, and mash to desired consistency. Stir in broccoli mixture. Spoon mixture evenly into potato shells.
  • Place potatoes in an 11X7 inch baking dish coated with cooking spray. Bake at 400 degrees for 15 minutes or until thoroughly heated.
  • Top each potato with 2 tablespoons cheese, and bake an additional 3 minutes or until cheese melts.
  • Top each potato with 1 Tablespoon sour cream.

  1. This was quite good and filling too! The only thing that could have made it better was the "good" versions of the lower fat ingredients lol. This is a bit of work, but worth the effort.
     
  2. Great! I had a lot of stuffing and was able to fill 2 extra potatoes with the amount from the recipe.

  4. I hope you'll forgive me, I didnt realise it needed broccoli, I was just thinking Ham and Cheese, until it was too late. So I missed it out, and to be honest, didnt miss it all. Otherwise, I made as directed and we enjoyed this treat, husband was delighted as he loves potatoes and I dont so they dont feature on our table so often! Glad I tried these coz they were great, and since I bought a bag of potatoes, not difficult to do it again!!! Thanks Teresa, made for Consideration Tag Game Oh gosh, just realised with the photo, omitted the topping of sour cream!!!! next time :)

  1. I made my potatoes the night before using Recipe #259599. I used a bag of steamfresh broccoli and cooked that up in the microwave and then started with step 3. I used unsalted butter instead of margarine as I don't buy margarine. I also used minced onions instead of chopped so my kids wouldn't complain. We also didn't top ours with sour cream and I'm sure I used more cheese then the recipe called for as I just dumped it on as we love cheese. This was a good, different side dish. I also brought one for lunch and it heated up nicely in the microwave.
