- 1 teaspoon olive oil
- 1⁄2 lb lean ground beef (10% or less fat)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 3 tablespoons taco seasoning mix
- 1⁄2 cup water
- 1 1⁄4 cups fat-free refried beans
- 8 taco shells
- 1 cup shredded lettuce
- 1 large tomatoes, diced
- 2 tablespoons sliced pitted ripe olives
- 1⁄2 cup finely chopped red onion
- 1⁄2 cup nonfat sour cream
directions
- Preheat the oven to 400 degrees F.
- Place the taco shells on a baking sheet and warm them in the oven, about 8 miuntes; keep warm.
- Meanwhile, heat a large nonstick skillet over medium-high heat.
- Swirl in the oil, then add the beef, onion, garlic, and seasoning mix.
- Cook, breaking up the beef with a wooden spoon, until browned, about 8 minutes.
- Stir in the water.
- Cook, until the liquid has evaporated, about 3 minutes.
- Stir in the beans and heat through.
- Spoon about 1/4 cup of the beef mixture into each taco.
- Top each with the lettuce, tomato, olives, onion, and sour cream.

These tacos were great! I've never added the refried beans with the meat before. DH and I enjoyed the creaminess of that mixture. I didn't bother with the 1 tsp oil as I almost never use oil to brown ground beef and I used soft taco shells. Of course there were lots of fixings to add in as suggested. Thanks for sharing.

WARNING!!! DO NOT COOK THE SHELLS ON 400 degrees! They will burn! Most of the time they are cooked @ 325 for 3-8ish minutes (depending on the brand) NOT 400. I wasn't paying attention and followed the directions and burned them. Had to start that all over again when everything else was done. The other problem is - if you use meat with more fat you have to strain it (and you don't need to add the oil), and so adding the seasoning when the directions say to is NOT a good idea. That being said these were awesome & I'll continue to make them this way from now on.

Yummy, hearty taco filling! I used 96% lean ground beef and used cooking spray in place of oil. The refried beans serve to stretch the ground beef as well as add some flavor and texture. We had this filling in hard and soft taco shells and we had a taco fixins bar. I may add refried beans to my taco filling all the time now. Thanx for posting!
