- 1 lb ground beef
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (7 1/4 ounce) package macaroni & cheese dinner mix
- 1 garlic clove, minced or crushed
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon italian seasoning
- 1 teaspoon salt
- 1 cup cheese, shredded (cheddar, monteray jack, blend, whatever!)
directions
- In large pot (Dutch oven), brown beef and onion, drain excess fat.
- Add green pepper, tomatoes (and juices from can), and add 1-1/2 CANS of water. Add macaroni from "dinner" and the cheese mix package. Add all seasonings and adjust to your own tastes.
- Cover and simmer for 15 minutes Stir, and add water IF necessary. Cover, simmer for another 10-15 mins, until macaroni is done. Take off heat and stir in shredded cheese. Serve.

Having been born/bred in NJ and moving to WY, I've experienced a lot of change in my life! But cooking has always been a joy. I learned at my mother's knee, as she taught me when I started in high school and she started back to full-time work. By the time I graduated, I was doing most of the daily cooking at home and all my mother's friends were jealous!
I would love to have a decent kitchen, and a decent
'audience" to cook for, but I'm limited by size and a "significant other" who thinks the only thing that's decent to eat is steak and potatoes! Creativity is out the window!
