X-Treme Cherry Bars

"These bright and cheery bars add pizzazz to any holiday cookie platter. You can make up your own combination of flavors by using different dried fruits and extracts with different Jell-o flavors to make an assortment of colorful bars. Kids will love them! Recipe from a Land O Lakes cookbook."

  • Heat oven to 375°F.
  • Combine flour, baking powder and salt in medium bowl and set aside.
  • Combine butter and sugar in large mixer bowl.
  • Beat at medium speed, scraping bowl often, until creamy.
  • Add Jell-o, and beat until well mixed.
  • Add eggs and almond extract and beat well.
  • Reduce speed to low and add flour mixture.
  • Beat until just combined.
  • Stir in cranberries and almonds by hand.
  • Spread batter into greased 15 x 10 jelly- roll pan.
  • Bake for 18 to 23 minutes or until edges are lightly browned.
  • Cool completely.
  • Sprinkle with powdered sugar; cut into bars.

  2. I made these for the 2006 Zaar Christmas Cookie Swap. They're a tasty blend of tart and sweet. I believe my pan was bigger than called for, so my bars were a bit thinner than those pictured here. Also I didn't have the slivered almonds that I thought I had on hand, so my bars went without. DSS discovered these cookies today and wiped them out; he thought they were great.

  4. Very different, easy and so good! Completely foolproof, I would think. I made these as instructed, didn't change a thing, and wouldn't. Could play with different flavors, though.
     
  5. I made these over the Holidays and put them on my cookie tray. They were just perfect. You want something different, try this recipe. I tweeked it a bit and used Cherry flavoring instead of Almond extract and added diced marishino cherry along with the cranberrys. It added a red color to the dough and a burst of flavor to the cookie. Definetly a keeper in my book!
