  1. In a 4 quart dutch oven sauté bacon until crisp, remove to drain on paper towels with a slotted spoon.
  2. Add onions to drippings, cook 5 minutes until softened.
  3. Add carrots, celery, peppers, garlic, and sauté 5-10 minutes.
  4. Add remaining ingredients and bring to boil.
  5. Reduce heat to simmer, cover, and cook 30 minutes, stirring occasionally.
  6. Discard bay leaves, sprinkle with bacon, serve.
