Directions

  1. Heat oil in large saucepan over medium heat. Add onion, carrot, celery, and garlic.
  2. Cook, stirring until onion is softened, about 5 minutes.
  3. Add split peas, potato, broth, oregano, and pepper and bring to a boil.
  4. Reduce heat and simmer, covered, until split peas are very tender, about an hour.
  5. Stir in turkey and cook until heated through, about 5 minutes.
