Yellow Squash Casserole

"This is a dish we had for any and every special occasion when I was young. I love the original version, which I am posting here, but you can play with it and make a light version with low fat items and it is delicious as well."

  1. Great with Ritz Crackers on top too. :)

  2. Good stuff. I used the last of the squash from my garden.I used butter instead of bacon grease and the flavor was very good. The squah was nice and tender. Went nicely with the crunchier texture of the crackers.

  3. Sounds great! I'm just going to change up the recipe a little bit when I make this...I am a vegetarian, so I'm going to use margarine rather than the bacon grease, and the only cheese we've got is fat free, so this recipe I think will be a little more heart-healthy! Thanks!

  4. This casserole was great! I fried a couple pieces of bacon to add and made just a half recipe for 4 of us. My oven is on the fritz so we ended up throwing it in a aluminum pan on the grill instead of baking in the oven. It turned out great and we were all wishing I had made a whole batch. I am putting this one in my permanent recipe book. Thanks for a great recipe.

  5. I made this dish for VFW Fourth of July party. It was a big hit, the older veterans really loved it. I did increase the amounts to make a larger dish. Fried bacon for the grease and added some crumbled bacon for more flavor. Gave my recipe away. Printing it now to make again today.
