“For all our international friends, these might need some explaining. Despite the name, Yorkshire puddings are not desserts, but a traditional English accompaniment to roast beef. Made from a savoury batter mix, they puff up into little cups of almost nothingness, to be filled with gravy. Alternatively, you can make one large one, and fill it with the beef and gravy, or even the entire meal. This is Jamie Oliver's recipe, which creates very light puds.”

  1. Whisk together the egg, flour, milk and seasoning until absolutely smooth and set aside for at least ten minutes.
  2. Meanwhile, heat the oven to 250°C Pour a little oil into each section of a muffin or cupcake tin (if making individual puds), so the bottom is covered a couple of millimetres deep.
  3. Place the tray in the oven and heat until the oil is super hot.
  4. Pour in enough batter to each hole to third-fill it, then place back in the oven immediately.
  5. Very important: do NOT open the oven door again while they are cooking! Cook for about 20 minutes, until crispy and puffy.
