  1. Beat together corn oil, sugar and eggs until well combined.
  2. In a bowl, sift together flour, baking soda, salt, cinnamon and cloves.
  3. Add to egg-sugar mixture.
  4. mixing well.
  5. Drain pineapple well.
  6. Add carrots, walnuts and pineapple to mixture.
  7. Blend to mix well.
  8. Pour batter into a graeased and floured 9 or 10 inch cake pan.
  9. Bake at 350F for about 1 hour or until a pick inserted in center comes out clean.
  10. Let cake cool on rack.
  11. Prepare frosting.
  12. Cream together cream cheese, powdered sugar, and vanilla extract.
  13. Split cake into two layers.
  14. Assemble.
  15. Cover with frosting.
  16. Sprinkle with coconut and garnish with a dusting of cinnamon.
