Directions

  1. Place the Yukon gold potatoes in a pot of boiling water with skin on.
  2. Heavily salt the boiling potatoes.
  3. When the potatoes are fully cooked (about 30 to 40 minutes), drain the water and leave the potatoes in the pot.
  4. Using a hand masher, thoroughly mash the potatoes with their skin.
  5. Add a drizzle of olive oil and the stick of butter. Thoroughly combine.
  6. Salt to taste and serve.
