Yummiest Coconut Cookies (Gluten Free)

"I made these cookies last night and they were delicious. They were very easy to make and the clean up was easy as well. The only thing I would do different next time is double the batch, I only got 10 cookies and they were all eaten in 15 minuetes.This cookie will definetly have a special place reserved on my Christmas cookie tray."

  • Preheat oven to 350 degrees.
  • Line cookie sheet with parchment paper.
  • In a medium size bowl with an electric mixer, beat the egg whites and salt together until they form soft peaks, then sprinkle in the sugar and continue beating until peaks are stiff.
  • Add almond extract and give it a quick buzz with the beaters just to incorporate it.
  • Now, with a wooden spoon stir in half the coconut;then the nutmeg;then the flour;then finally fold in the remaining coconut.
  • Using a scoop or just working with two spoons, form snowballs a couple of inches apart on your cookie sheets--aim for about 10 so that you can keep them on the same sheet.
  • Press half a maraschino cherry in the top of cookie.
  • Bake for 15 minutes, or less time if you make small ones, just until they are a light and golden colour.
  • Remove cookie tray from oven, remove the cookies to a cooling rack and let cool.

  2. nice and easy cookie to make. that nutmeg was a little bit much and i'll half it next time but the cookie was nice. i would recommend covering the cookies because they do seem to dry out a little too much to be overly tasty the next day. i also skipped the cherry since i'm not overly fond of the maraschino cherry.
     
  3. With Christmas fast approaching I hurriedly searched for a cookie I could make for a friend. The cookie must be gluten free and because of a snow storm, it had to be with the ingredients I had at hand. I was so thrilled with the outcome of these cookies. They look so festive and were so easy to make. Most of all, they taste great. As my Norwegian ancestors would say: "Tusen Takk" which means a thousand thanks.
     
  4. The coconut lovers in the house said these were great cookies. I got 19 cookies and they took about 11 minutes to cook. I topped them with 2 milk chocolate chips each. These were easy to make too. Thanks for the recipe.

I have just started to get the hang of this tricky gluten free diet. It really is ALOT harder than it seems.But however, I am determined to make the best of it. I very much enjoy cooking and baking, so I have been buying every gluten free cookbook I can get my hands on and every moment I get, I try to test out some of these new recipes. However frustrating and difficult it's been trying to experiment with all these new flours and ingredients, it has been alot of fun, and everytime I find a good reipce, it makes it all worth it. I want to find as many wonderful and delicious gluten free recipes as I can, and post them all on this site. I know how hard it is when you are first diagnosed, and I want to help others who have recently been diagnosed or just others that have celiac disease that need some great gluten free recipes. Celiac disease is something that we have to live with everyday, so it's important that we make the best of it.For sure at least one good thing has come from having Celiac Disease, I have become a better cook and have truly cherished the moments that I spend in the kitchen. All the recipes that I post on this site I have made and I have found to be very good! They are all gluten free! Some of the recipes use special ingredients that you can buy at specialty health stores, and some of them are recipes that you can make with ingredients bought right at your local grocery store. My recipes that use special flours etc. are named starting with gluten free [ex. Gluten Free French Bread], and the recipes that use everyday ingredients end with the word gluten free in brackets [ex.
