  • Combine bran cereal, oat bran, wheat bran and oats in a large bowl. Pour in boiling water and stir until moistened.
  • Set aside for 15 minutes.
  • Combine whole wheat flour, sugar substitute, baking sida, cinnamon, and salt in a bowl.
  • Mash out lumps in bran mixture. Stir in buttermilk applesauce, egg substitute and oil until smooth.
  • Stir in flour mixture and stir until smooth. Batter will be thick and using an electric mixture makes it easier.
  • The batter can keep in your refrigerator for up to 3 weeks so you can bake muffins as you need them or bake them all at once. The muffins freeze well too.
  • Pour into paper lined muffin pan.
  • Bake until puffed and golden brown, about 25-30 minutes. Cool muffins 3 minutes.
