- 2 boneless skinless chicken breasts
- 1 tablespoon ground ginger
- 1⁄2 tablespoon minced garlic clove
- 1 tablespoon vegetable oil
- 2 tablespoons soy sauce
- 32 ounces frozen vegetables
- 1⁄2 teaspoon ground pepper
- 1 cup cooked brown rice
directions
- Cut the chicken into 1 inch pieces.
- Heat the oil, ginger and garlic over medium to medium high heat.
- Brown the chicken.
- Add veggies, and cook until veggies are crisp-tender.
- Stir in soy sauce and pepper.
- Serve over side of rice.
