- 9 -12 peeled and cut potatoes
- 1 (8 ounce) package cream cheese
- 1 (8 ounce) container sour cream
- 1 -2 tablespoon butter
- salt and pepper
directions
- Cook and mash potatoes.
- Add the remaining ingredients and mix together.
- Put in casserole dish and add extra shredded cheddar on top if prefer.
- Place in oven to melt top layer of cheese - 350 degrees.
- Can be made a day ahead and reheated about 30 mins at 350 degrees - this is what I prefer to do - makes all the flavors blend together.
- Can add more or less sour cream and cream cheese as prefer.

I gave this recipe 4 stars. This recipe got mixed reviews in my house. My 6 yr old newphew didn't like these much but he's not a mashed potato fan but he did say he'd try these again with gravy over them. My future hubby loved these potatoes, and I really liked them. You can really taste the cream cheese, the sour cream and the butter. They all blend together so nice. I had some mashed potatoes to use up so I turned to this recipe. I decided not to top these potatoes with cheeese just to bake them as is. I did freeze some for use later, which I plan to serve with green onions and chopped cooked bacon. Overall I will make these again for sure! Thanks for posting a real yummy recipe! Christine (internetnut)

These are the BEST mashed potatoes we've ever had. Wanted something special for our Thanksgiving dinner and this was perfect. Went to together easy and tasted wonderful. Did without the cheese option as served with turkey gravy but will try that soon too. I didn't change a thing, made just as directed and couldn't ask for better. Thanks so much for posting.
