Yummy Mex Skillet Dinner

"This is so yummy! We've been trying to stay away from the standard box meals so I came up with my own version of a hamburger helper type meal, expcet so much better, not to mention cheaper! We use ground turkey but you're more then welcome to sub for ground beef. It's all in taste. Also the measurments are guest as I usually just eyeball it. I'll also serve with a sprinkle of cayenne. UPDATED!"

ingredients

  • 1 lb ground turkey
  • 12 onion, chopped (optional or you can use onion powder for those that don't like the onion pieces, like DH!)
  • 2 -3 cups cooked egg noodles (or any noodle you prefer)
  • 1 (10 3/4 ounce) can cheese soup (the fiesta blend would also be great!)
  • 1 (10 3/4 ounce) can chicken broth or (10 3/4 ounce) can water
  • 1 12 tablespoons taco seasoning (to taste)
  • salt and pepper, to taste
  • sour cream (optional)
  • salsa (optional)

directions

  • In a pot cook the noodles according to package, or you can throw them with the meat and sauce if you'd like.
  • In a large skillet, brown meat and onion til done; strain and return to skillet.
  • Add broth, chicken broth, taco seasoning and noodles. Cook on medium low heat for 10 minutes for flavors to incorporate. If sauce seems to thick, add a little more broth or water.
  • Season with salt and pepper.
  • Serve with a dallop of sour cream. Enjoy!
  • *OPTIONS* For a twist, throw in some frozen corn and black beans. Yum!

  1. This was good and easy to make. I used ground beef and minced onions. I also used the chicken broth and a whole packet of taco seasoning. I also added picante sauce as we thought it needed it. I didn't have any sour cream but think it would been great with it on top. I used the cheese soup but think it would have been better with the fiesta soup.
     
  2. I made this exactly as posted, but felt that it needed more taco seasoning, so I increased it 3 x (Almost used the whole seasoning pkg). Although it tasted fine just like that, I wanted a little more color, so I added the suggested corn and black beans. I topped it with salsa and sour cream. This dish cried out for a few chopped green onions sprinkled on top, but I didn't have any. Next time I'll add some jalapeno's and some freshly chopped cilantro. Thanks for posting! Made for Fall PAC 2009.
     
  3. I can't beleive I forgot to review this recipe. Made a couple weeks ago for dinner- and we thoroughly enjoyed it. I was leery of the canned soup, as I really do not like cooking with them, but the dish came out great. I only added some cayenne pepper because we like things hot, but that was the only change I made. This will definately be made again. Thanks for posting.
     
  4. After seeing the photos of this recipe that Chef#481092 had taken, I knew I had to make it. So on 4/21/09 I did.:)As the turkey was cooking, a bit of chopped onion was added. For the soup,a Southwestern Pepperjack Blend was used.Instead of using a store bought taco seasoning, Recipe#199955 was used.I want to thank Chef Vicki in CT for the suggestion of the tomatoes on the top. And I went just a bit further by adding some lettuce and shredded cheese to the top.My SO and I both really enjoyed the spicy taste.This will be made again. Thanks for posting and, " Keep Smiling :) "
     
  5. I added one chopped onion to meat as it cooked. Next time will top with chopped tomatoes and jalapenos and/or salsa. I added boullion cubes to the pasta water then just used this as the broth/water. For PAC.
