Yummy Oatmeal Butterscotch Cookies

"I was looking through all the wonderful Oatmeal Butterscotch recipes here on 'Zaar and was surprised that there was not this basic recipe which DH was craving. Found this one on Hershey's Kitchens website. These came out just how I rememebered them, chewy, sweet and delicious. In my oven the cookies came out best when cooked the full 10 minutes. DH sugggests that these may also be good for you because of the oatmeal, I think otherwise, but they sure taste good. These cookies freeze well too!"

  • Preheat oven to 375°F.
  • Beat butter and sugars in a large bowl until well blended. Add eggs and vanilla, beat well.
  • In a separate bowl combine flour, baking soda, cinnamon and salt; gradually add to butter mixture, beating until well blended.
  • Stir in oatmeal and butterscotch chips, mix well.
  • Drop by heaping teaspoons onto ungreased cookie sheet.
  • Bake 8-10 minutes or until golden brown. cool slightly, remove from cookie sheet to wire rack. Cool completely.
  • Enjoy!

  1. I scored this as a "2-star" recipe, only to make it stand out...I think that it could be a "5-star" cookie, with just a few small changes that some of the other reviews posted on already. I agree with the first few reviews... I made the recipe "as is", and it seemed a little too sweet, and a little too "thick" with oats. It's a good "base" recipe, but the next time I try it, I think I would follow the suggestions of others. Cut each sugar back to 1/2c. each, and decrease the oats by 1 cup, and increase the flour. I also started baking the cookies on parchment, and that seemd to bake them better. They didn't turn out so thin/falling apart on me.
     
  2. Needed a couple more minutes since I made them kinda big. I used both 1/2 tsp vanilla and zest of a whole orange from my yard. Soooo great! Orange is my new secret ingredient! Snuck in some flax too.
     
  3. Way too much sugar!!! Cookies came out flat. Make sure you chill the dough and use half butter, half shortening.
     
  4. Yummy! I baked mine about 12 minutes and they turned out perfectly chewy. My family could hardly let these cool before they were taking them "off my hands". Thanks for sharing!
     
  5. The family loved these cookies, but we are big butterscotch fans,,,unfortunately I couldn't have any as they are not gf, however, I have a cunning plan involving buckwheat and gf flour. Thank you for sharing.

I am a coastal California girl, relocated to Arizona a few years back now. I never thought I would like Arizona, we were giving this locale a two year trial period. Well I'm here to say I love it here!! The state, the weather, the community and all that goes with it. Our favorite time of day is the morning, sitting out on the back patio with our coffee, watching all the bird life; quails, thrashers, sparrows, woodpeckers, starlings, mockingbirds, wrens and the cottontail bunny rabbits and the occasional coyote passing through the yard. We have wonderful weather 10 months out of the year, great sunsets and great neighbors, who could ask for more! My folks came to visit us, fell in love with the community as well and in three days they bought a place too! My Mom calls me the president of the Chamber of Commerce, because I showed her the benefits and amenities of our community, so that she fell in love with it as well. So I took the next logical step and got my Real Estate license and became a Realtor. I am passionate about my new community, my new profession and all the regional southwest cooking possibilities!
