  1. I am lucky enough to have a local supplier of high quality za'atar and loved using it in this recipe. The bread was very easy to put together and packed with wonderful flavor from the generous use of the spice. Half my pitas were served plain, the other were sprinkled with some reduced fat feta cheese. My pitas had more than the stated amount of spice as I just sprinkled it on the egg washed bread and brushed off the excess. Speaking of the egg white, apply liberally as it not only helps glue the za'atar, it also helps keep the bread moist while baking. I served mine with hummus and a Tunisian beet salad. Yummy. Thanks Debbie.
