“This recipe has three different types of beans, corn, cilantro and lime juice and is always a hit at home and when taken to parties. We eat it as a bean salad but I have had people use tortilla chips to eat the 'salad'. It's best to make this salad ahead of time and let it marinate a couple of hours (or longer).”

  1. Drain beans and corn. Mix first six ingredients pour over beans and corn mixture. Gently toss. Chill until ready to serve (the longer this marinates the better it gets).
