Zesty Bean Salad

"This recipe has three different types of beans, corn, cilantro and lime juice and is always a hit at home and when taken to parties. We eat it as a bean salad but I have had people use tortilla chips to eat the 'salad'. It's best to make this salad ahead of time and let it marinate a couple of hours (or longer)."

  • Drain beans and corn. Mix first six ingredients pour over beans and corn mixture. Gently toss. Chill until ready to serve (the longer this marinates the better it gets).
