Directions

  1. Place first 7 ingredients into a cruet or shaker.
  2. Shake until well blended. Set aside.
  3. Divide quinoa onto individual plates or bowls.
  4. Divide salad greens and layer on top of quinoa.
  5. Divide tomatoes, black beans, corn, jicama, and feta cheese on top of each salad.
  6. Layer sliced chicken breast on top.
  7. Drizzle with salad dressing.
