3 eggs, hard-cooked
3 tablespoons mayonnaise
1 tablespoon prepared mustard
¹⁄₈ teaspoon salt
¹⁄₈ teaspoon pepper
¹⁄₈ teaspoon lemon juice
1 tablespoon green onion, minced

directions

In a small bowl, combine mayonnaise, mustard, salt, pepper, and lemon juice.
Stir in eggs with a fork, chopping them into bite-size pieces.
Add green onion.

Yummy! This is pretty much how I make my egg salad, but I don't use quite that much mustard. I really enjoyed it with the extra mustard and the lemon juice. This made great snadwiches. Thanx for posting!
