Zesty Polynesian Scallops

"This Polynesian dish is reminscent of the uniquely tropical cuisines of Hawaii and New Zealand. It's a very easy dish to prepare, and it makes a very elegant dinner, especially paired with a dry white wine or a tropical orange-mango blend fruit juice. But remember to always take care not to overcook scallops or they will become tough. As soon as they lose their translucence and turn opaque, they are done."

  • Broil the scallops for 4 minutes, then turn and broil 2 more minutes.
  • In a large saucepan, sauté the chopped onion in the olive oil until tender. Add the sliced mushrooms, bell pepper strips, and chopped tomato; cook until all the vegetables are heated through.
  • Arranged the sautéed vegetables on a platter. Top with the broiled scallops. Layer the avacado slices on top of the scallops, then spread mango salsa over the the avacado slices. Top with sour cream, and garnish with green onion slices.

Easy to prepare, elegant and tasty enough to serve to guests - just make sure you have a copy of the recipe on hand to give to them! :) - and oh so much a recipe I know I shall make and enjoy again and again.   3. We loved this dish! All the flavours complimented each other. We used a home made mango salsa that had tomatoes included, so we did not add tomatoes to the vegetable mix. Next time we would add some garlic and perhaps lemon to the vegetable mix. We seared the scallops in a pan with a bit of olive oil, instead of broiling. Made for 1-2-3 tag.
     
  4. My other half's been after me to make a scallop dish, as this one was it! I did use just half the avocado & sliced it over only half of the veggies (NOT my half) & we were both very satisfied with the results! Also used a homemade mango salsa ~ Very, very nice! This site used to be awesome. It was at the top of its game when it was called Recipezaar, but that was many years ago. The site was purchased by Scripps and belly-flopped into mediocrity. A few of the faithful members remained, hoping to wait out the storm of corporate nonsense. But alas, it never got better and just continued on its terminal path to nothingness. So most of the loyal members have vanished and made homes at better recipe sites.
