  • In a large and deep frying pan, cook sausage, cumin, garlic, green peppers and onions, stirring often.
  • Drain any excess fat.
  • Dissolve bouillon cube in water and add to skillet.
  • Stir in jalapenos and rice, bringing to a boil.
  • Reduce heat and simmer, uncovered, until water is absorbed and rice is cooked, about 20 minutes.

  1. I made this as a main dish and used smoked sausage. It definitely had a zing from the pepper, but it was really good.
     
  2. I'm giving this recipe 5 stars even though I did not use the sausage and I halved it for two people. I was very concerned that the onions and peppers would be too much, but my worries were unfounded. This made a scrumptions side dish to my London Broil and sauteed yellow squash, carrots and green beans. I used two cloves of garlic and one whole large jalepeno (I'm sick, I admit it, we all know I like it "hot"). This is a keeper and it's a recipe that you can play around with to suit your tastes. You could throw in some red bell pepper, a little celery, whatever suits your tastes. Thanks Sackville!!! Superb in my book. Crabby
     
  3. I made this as dinner tonight for my husband. I don't normally make him his own meal, but he is in class on Thursday nights (usually just goes from work to school) and I had planned a dinner for the kids and I that he doesn't like. As he happened to be home I thought I would try to make something he could eat before he left. I used some low fat chicken and spinach sausage, and I used fast cooking brown rice (as I figured regular brown rice would take too long). We didn't think it was spicy at all, even with the peppers. Lovely flavors and a fast dish to put together.

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Right now we are travelling around the world on our bicycles, so I only pop onto Zaar occasionally, when internet connections and time allow me to. If I don't reply to a message about one of my recipes, now you know why! Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
