1. Love this recipe. I use jalapeno Montery Jack to add even more zip to the zippy.

 2. Great recipe...tried it a couple of weeks ago and now my hubby wants it every week!

 3. Delicious! I made it exactly according to the recipe. I can't wait to take the leftovers in my lunchbox - unless my family gets to them first. Will definitely make again. Thanks to you and Gay Kelley!

 4. Definitely a keeper! Delicious flavor combination and so easy to make with leftover rice. I only had one zucchini but I don't love that veggie, so it was just the right amount. Otherwise, I followed the recipe exactly (well, maybe a sprinkle more cheese and I sped it up by baking it at 400). Next time I'll make it even healthier by using ground turkey and light sour cream.

I live in the Kansas City area and have many hobbies including cooking, reading and spending time with my husband and two children who are very active in sports now. I also have an eBay business which is a fun hobby that makes a little extra money! My interest in cooking focuses on making healthy dishes that are more satisfying than the higher fat and higher sugar versions. If I had a month off with no responsibilities, I would spend it at a luxury spa.
