ingredients
- 1 1⁄2 cups sunflower seeds, raw and soaked
- 1⁄2 cup dill weed, chopped
- 1⁄2 sweet onion
- 2 celery ribs, chopped
- 1 tomatoes, coarsely chopped
- 3 -4 tablespoons lemon juice
- 1⁄2 jalapeno pepper
- 1 teaspoon salt (Himalayan)
- 1 teaspoon extra virgin olive oil
- fresh ground black pepper, to taste
- 1⁄2 cup bell pepper, chopped into matchsticks (optional)
- 1⁄2 cup cucumber, peeled and chopped into matchsticks (optional)
- 6 sheets nori, raw
- lettuce
directions
- Place sunflower seeds, dill, onion, celery, tomato, lemon juice, salt, olive oil, and pepper to taste in food processor and pulse until chopped but a little bit chunky.
- Spread the mixture evenly over each nori sheet.
- (Optional: place a few pepper or cucumber matchsticks on the mixture before rolling.).
- Roll sheets up and slice into 1 1/2 inches pieces.
- Serve on a bed of lettuce.

My husband and I enjoyed this, but the flavor of the sunflower seeds was pretty strong and the mixture was very wet, which made it difficult to roll in the nori. I added cucumber and avocado slices. It was fun to try a different take on veggie sushi. Thanks for posting this! Made for Veggie Swap, January 2010.

This was pretty good. I also did not have fresh dill and used 8 tsp of dried dill instead. I also omitted the jalapeno pepper as I did not have any on hand. I have a small processor so this took me a lot longer than 5 minutes to put together. I wasn't sure how long I had to soak the sunflower seeds, mine soaked for about 4 hours. Instead of serving these on a bed of lettuce, I incorporated the lettuce in the roll to help keep the nori from getting wet from the "tuna." I used red bell pepper as suggested, and added matchsticks of raw zucchini. I couldn't help myself from dipping these into some soy sauce and wasabi for an enhanced sushi eating experience. It took a while to put together, but it was yummy. Thanks for posting.
