“I was cleaning up and came across a tablet of hand written recipes that I had copied down from somewhere. I don't remember where they came from but I thought I should put them here for safe keeping. I haven't made this yet but it is on my list for when Fall gets here. I liked this b/c cognac in it. I don't usually use wine in cooking so I would be using 1/2 cup more broth.”

Directions

  1. Saute onions in oil with garlic and salt til onions are golden, 5 minute.
  2. Reduce heat and continue cooking til onions are soft, 20 minutes.
  3. Add flour to onions, stir 1 minute.
  4. Add broth, wine, cognac, bay leaf and pepper.
  5. Bring to a boil.
  6. Reduce heat and simmer 30 minute uncovered.
  7. Remove bay leaf.
  8. Preheat oven to 400.
  9. Put soup in 4 oven proof ramekins.
  10. Top with toast and cheese.
  11. Bake until cheese is bubbly, 15 minutes.
