- 3 cups zucchini, thinly sliced
- 1 cup Bisquick baking mix
- 4 eggs, beaten
- 1 teaspoon salt or 1 teaspoon salt substitute
- 1 garlic clove, crushed
- 1⁄2 cup onion, chopped
- 2 teaspoons parsley
- 1⁄2 teaspoon oregano
- 1⁄2 cup olive oil
directions
- Preheat over 350 degrees spray 13X9X2 baking dish.
- Combine ingredients stir until smooth.
- Pour into baking dish.
- Bake 25 minutes until golden brown and knife comes out clean.
- Serve warm.
