  • Preheat oven 450°.
  • Simmer zucchini till barely tender; drain.
  • When cool, split in half and scoop out.
  • Fry bread cubes till crisp.
  • Mix with tomatoes.
  • Stuff zucchini; sprinkle with cheese.
  • Pop in oven till bubbly.

  2. Yum ! I made these for a buffet lunch meeting and they went down a treat. I didn't have bread cubes available to buy here in NL so left them out and I don't think that the recipe suffered any for the ommission. I cut each of my zucchini into 3rds and then in half horizontally and these pieces were perfect as little serving each... quite a few guests came back for more. They were easy to prepare a few hours in advance and keep in the fridge until time to put them into the oven. Please see my rating system... a lovely 4 stars, I will definately be making these again :) Thanks !
