Ingredients Nutrition

  • 3 cups grated zucchini (or combined with other veges i.e. grated carrot, chopped silver beet, or corn kernels)
  • 1 cup grated cheese
  • 1 onion, finely chopped
  • 1 cup self rising flour
  • 5 eggs
  • 25 ml oil (optional)
  • 3 slices bacon, chopped and cooked (optional)

Directions

  1. Beat eggs and add all other ingredients, mixing well together.
  2. Bake in a moderate over (180 C) until golden brown.
  3. Slices of tomato can be used for decoration, as a nice extra touch.
