Zucchini Bars

"Yummy yummy bars which a former co-worker used to bring in years ago. Probably my first experience eating zucchini. And I especially like the frosting, which is NOT made with cream cheese! Good eating."

  • Preheat oven to 350 degrees.
  • Cream butter until light and fluffy and beat in sugars.
  • Add eggs one at a time, and then mix in vanilla.
  • Stir in flour and baking powder.
  • Mix in zucchini, coconut and nuts.
  • Spread evenly in a greased 15 x 10 x 1" baking pan.
  • Bake 30-35 minutes.
  • While bars are baking mix together the frosting ingredients.
  • When bars are done, let cool for 10 minutes, and then spread with frosting while still warm.
  • Cut into squares.

  1. This is a very good zucchini cake recipe. It is sweet enough, but not too sweet. It is very moist and it has a wonderful texture. I also enjoyed the frosting. Thank you for sharing this recipe ReeLani. This one is a keeper...:))
     
  2. ReeLani I enjoyed these bars, but found them to be a bit dry, and more cake-like (than like a bar). The coconut tasted great in these bars, and I really liked the cinnnamon in the frosting, but ReeLani I should inform you, I found I needed to add more confectioners' sugar when making the frosting, plus I had to make one and a half times the amount of frosting, otherwise there wasn't enough frosting to frost these bars. I also found I only needed to bake the bars in the oven for about 28 minutes. Thank you ReeLani for sharing your zucchini bar recipe with fellow Zaar members, they were good!
     
  3. I made these bars last night and everyone loved them. Easy to make and easy to eat. I had to print out the recipe for people at work. I'll make these again and again. The batter is thick so be sure to spread evenly in the pan. I sprayed the pan with pam also.
     
  4. I was going to submit this recipe as a favorite of mine and was really suprised to see the EXACT recipe here! I have not met a person who does not like these zucchini bars! I also add more sugar to the frosting and I have never added the coconut.
     
  5. These were very moist and tasty.I used about 1/2 cup more sugar in the icing ,as I found it a little too runny,A nice change.Don Steele
