Bar Ingredients
- 3⁄4 cup butter, softened
- 1⁄2 cup packed brown sugar
- 1⁄2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 3⁄4 cups all-purpose flour
- 1 1⁄2 teaspoons baking powder
- 2 cups shredded zucchini
- 1 cup shredded coconut
- 3⁄4 cup chopped walnuts

Frosting Ingredients
- 1 cup confectioners' sugar
- 2 1⁄2 tablespoons milk
- 1 1⁄2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon cinnamon
directions
- Preheat oven to 350 degrees.
- Cream butter until light and fluffy and beat in sugars.
- Add eggs one at a time, and then mix in vanilla.
- Stir in flour and baking powder.
- Mix in zucchini, coconut and nuts.
- Spread evenly in a greased 15 x 10 x 1" baking pan.
- Bake 30-35 minutes.
- While bars are baking mix together the frosting ingredients.
- When bars are done, let cool for 10 minutes, and then spread with frosting while still warm.
- Cut into squares.

ReeLani I enjoyed these bars, but found them to be a bit dry, and more cake-like (than like a bar). The coconut tasted great in these bars, and I really liked the cinnnamon in the frosting, but ReeLani I should inform you, I found I needed to add more confectioners' sugar when making the frosting, plus I had to make one and a half times the amount of frosting, otherwise there wasn't enough frosting to frost these bars. I also found I only needed to bake the bars in the oven for about 28 minutes. Thank you ReeLani for sharing your zucchini bar recipe with fellow Zaar members, they were good!
