Zucchini Bread

ingredients
- 4 cups shredded zucchini
- 3 cups all-purpose flour
- 2 1⁄2 cups sugar
- 1 1⁄4 cups vegetable oil
- 4 beaten eggs
- 1 tablespoon vanilla, plus
- 1 teaspoon vanilla
- 1 tablespoon ground cinnamon
- 1 1⁄2 teaspoons salt
- 1 1⁄2 teaspoons baking soda
- 1⁄2 teaspoon baking powder
- 1 cup nuts (optional)
directions
- Preheat oven to 325.
- Grease generously bottoms of 2 loaf pans.
- Blend all ingredients on low 1 minute.
- Beat at medium speed 1 minute.
- Pour into pans.
- Bake 45-50 minutes until toothpick comes out clean.
- Cool and Enjoy!

Hi! My name is Lynn. Dh and I were married in June 1992. We are grain and livestock farmers. We have 2 children. I have been a stay-at-home mom since 1997 and love it. I teach Sunday School and lead a mother's bible study at our church. I love recipes. I am always asking for someone's recipe. I find it a huge compliment when people ask for my recipes. We found out last summer that dh is allergic to wheat. Gluten free cooking can be challenging but I am getting used to adjusting my recipes. Besides cooking my other hobbies include flower gardening, bird watching, photography and scrapbooking.
