- 3 eggs
- 1 cup Splenda Sugar Blend for Baking
- 1 cup olive oil
- 2 cups zucchini, grated
- 3 teaspoons cinnamon
- 3 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon baking powder
directions
- Pre-heat oven 325 Degrees.
- Cream eggs and Splenda.
- Add oil, Zucchini and vanilla. Sift in remaining ingredients.
- Pour into two greased loaf pans.
- Bake at 325 degrees for 1 hour.

I love to cook with my husband. We always have this little joke about me being his Sous Chef because he has been cooking so much longer than I have. I am a big family kind of person.
