  1. Preheat oven to 350 degrees F. Lightly grease and flour two 9 by 5-inch loaf pans.
  2. In a large bowl cream the eggs, sugar and vegetable oil until light and fluffy. Mix in flour, salt, cinnamon, baking powder, and baking soda. Add nutmeg, zucchini, nuts and vanilla extract; stir until well blended.
  3. Pour batter into prepared loaf pans and bake 55 to 60 mins or until a toothpick inserted in center comes out clean.
  4. Remove from oven and cool on wire racks 10 mins; remove from pans. Cool completely before slicing.
