Zucchini Bread
"The best I have ever found...I have tried many but none own up to this one...I got it many years ago from a friend...I have miss place this many times and have been just sick about it....but it always manages to show back up...it also works great with bananas instead of zucchini. This recipe is pretty much fool proof...always perfect every time...."

2 loaf pans
ingredients
- 3 eggs
- 1 cup oil (can be substatued with apple sauce or yogurt)
- 2 cups sugar
- 2 cups flour
- 2 cups zucchini (grated)
- 1⁄4 teaspoon baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 2 teaspoons vanilla
- 1 cup nuts, chopped (optional)
directions
- mix together and pour into greased loaf pans (2 regular or 6 small) and bake for 1 hour or until toothpick comes out clean @ 350 degrees.
