  1. 1 cup salad oil (wesson or mazola)
  2. 3 eggs.
  3. 1 1/2 cups sugar.
  4. 2 cups grated zucchini (skin on).
  5. 2 teaspoon vanilla.
  6. Mix all above ingredients in a large bowl.
  7. Add the remainder of ingredients.
  8. 3 cups all purpose flour.
  9. 1 teaspoon baking soda.
  10. 1 teaspoon baking powder.
  11. 2 teaspoon cinnamon.
  12. Mix well.
  13. pour into 2 greased loaf pans.
  14. Bake at 325 F for 1 1/2 hours.
  15. You can add 1 cup of nuts or 3/4 cup of raisins.
