- 2 eggs
- 1⁄2 cup vegetable oil
- 1 1⁄2 teaspoons vanilla
- 1 1⁄8 cups sugar
- 1 1⁄2 cups flour
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1 cup grated zucchini
- 1⁄2 cup chopped walnuts (optional)
directions
- Preheat oven to 325.
- Grease and flour 8 x 4 inch pan.
- Beat eggs, oil, vanilla and sugar together in a large bowl until creamy.
- Add flour, salt, baking powder, baking soda and cinnamon. Beat well.
- Stir in zucchini and nuts until well combined.
- Pour into prepared pan.
- Bake 40-60 minutes. Tester inserted in center should come out clean.
- Cool in pan on rack for 20 minutes.
- Remove bread from pan and completely cool.

I was looking for a good zucchini bread recipe. I tried this one and it was perfect. I tweaked it a bit to our tastes by using only 1 c white sugar and 1/8 c brown sugar, packed. I also added a whole 2.25 pkg. of walnut pieces and I baked it a full hour. It was beautifully golden brown and the texture was wonderful. Thank you so much for sharing this recipe. It will be the one I always use from now on.
