  • Preheat oven to 325.
  • Grease and flour 8 x 4 inch pan.
  • Beat eggs, oil, vanilla and sugar together in a large bowl until creamy.
  • Add flour, salt, baking powder, baking soda and cinnamon. Beat well.
  • Stir in zucchini and nuts until well combined.
  • Pour into prepared pan.
  • Bake 40-60 minutes. Tester inserted in center should come out clean.
  • Cool in pan on rack for 20 minutes.
  • Remove bread from pan and completely cool.

  1. I was looking for a good zucchini bread recipe. I tried this one and it was perfect. I tweaked it a bit to our tastes by using only 1 c white sugar and 1/8 c brown sugar, packed. I also added a whole 2.25 pkg. of walnut pieces and I baked it a full hour. It was beautifully golden brown and the texture was wonderful. Thank you so much for sharing this recipe. It will be the one I always use from now on.
