- 2 eggs
- 2 cups sugar
- 1 cup oil
- 2 cups zucchini, grated
- 1 tablespoon vanilla
- 3 cups flour
- 1 teaspoon baking soda
- 1⁄4 teaspoon baking powder
- 1 teaspoon salt
- 2 1⁄2 teaspoons cinnamon
- 3⁄4 cup finely chopped nuts
directions
- Preheat oven to 350.
- beat eggs fluffy.
- Add oil, sugar, vanilla, zucchini and mix.
- Combine dry ingredients and add to wet. Mix.
- Bake in four mini pans for 40 minutes. Bake in 2 regular pans for 1 hour. Grease pans well. Add waxed paper to bottom of pan and grease the wax paper.
- Also makes good mini muffins.
