  • Preheat oven to 350.
  • beat eggs fluffy.
  • Add oil, sugar, vanilla, zucchini and mix.
  • Combine dry ingredients and add to wet. Mix.
  • Bake in four mini pans for 40 minutes. Bake in 2 regular pans for 1 hour. Grease pans well. Add waxed paper to bottom of pan and grease the wax paper.
  • Also makes good mini muffins.
