  1. Preheat oven to 350.
  2. beat eggs fluffy.
  3. Add oil, sugar, vanilla, zucchini and mix.
  4. Combine dry ingredients and add to wet. Mix.
  5. Bake in four mini pans for 40 minutes. Bake in 2 regular pans for 1 hour. Grease pans well. Add waxed paper to bottom of pan and grease the wax paper.
  6. Also makes good mini muffins.
