  • In one bowl mix first 6 ingredients, in another bowl mix remaining ingredients.
  • Combine flour mixture into liquid -- mix thoroughly with your hands, as you would for bread.
  • Bake in a greased loaf pan at 350 degrees for approx. 35-55 minutes, according to your oven.
  • In the fall we make this recipe with finely chopped, peeled apples.
  • They freeze great!

  1. Excellent recipe. I've never made zucchini bread before, but was given some fresh from a garden. I didn't have any lemon peel, so I put in a little nutmeg, can't have nuts so I tried grape nuts and it worked great. The zucchini was a little dry and I ended up adding another egg to get it to stick together. Fantastic flavor.
     
  2. This recipe was very good. I added another egg which made it just a little heavier... which we like when it comes to breads like this. It is a recipe we will make again. :)
     
  3. Yummy, my kids said it was the best bread they have ever tasted! I 1 cup zucchini and 1/2 cup apple, blended it with the rest of the wet ingredients and then added it to the dry ingredients.
     
  4. This has become an all time favorite among my friends. I have gotten more compliments from this than anything I make. It is a perfect recipe! (I use lemon juice instead of zest, and I always use the full 1 1/2 cups of zucchini.)
     
  5. a little to much cinnamon, good texture, no nuts used, not quite 4 stars closer to 3 1/2, very easy to make

We recently moved to north central Arkansas, in the beautiful Ozark Mountains.We are organic gardeners and have a large garden planned. I love to read and collect cookbooks,and enjoy getting gourmet recipes from the internet. I love cooking different foods. There is just the 2 of us, 3 dogs a spoiled cat and a box turtle.We are also a foster home for 2 beautiful "ladies"...donkeys. We spent most of our married life as RVers and have been to the lower 48 plus Alaska. Loved meeting so many people and seeing so much of our beautiful country.But it's now time to sit and enjoy!
