- 2 cups zucchini, shredded
- 1 cup applesauce, unsweetened
- 3 eggs
- 1 cup sugar
- 1⁄4 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 1⁄2 teaspoons nutmeg
- 1 teaspoon salt
- 3 teaspoons vanilla
- 1 cup walnuts, chopped
- 2 cups whole wheat flour
directions
- Beat eggs and sugar together and then add applesauce.
- Add flour, baking powder, baking soda, spices, vanilla, and nuts.
- Squeeze excess water from zucchini and fold into mixture.
- Pour into (greased) loaf pans.
- Bake at 350 for 45 minutes.
