  • Beat eggs and sugar together and then add applesauce.
  • Add flour, baking powder, baking soda, spices, vanilla, and nuts.
  • Squeeze excess water from zucchini and fold into mixture.
  • Pour into (greased) loaf pans.
  • Bake at 350 for 45 minutes.
