  1. preheat oven to 350.
  2. Prepare pans with cooking spray and flour or parchment.
  3. Cream butter and sugars.
  4. Add eggs one at a time.
  5. While mixing, add baking powder, baking soda, salt and cinnamon.
  6. Add canola oil, slowly.
  7. Add flour, zucchini and nuts.
  8. Bake in a 350 degree oven for 35 minutes for cupcakes, about 75 minutes for 13 x 9 cake .
  9. Cool before frosting or sprinkling with confectioners sugar.
