  • In a large bowl combine grated zucchini, cheese, oats, breadcrumbs, ham, onion, garlic, eggs and seasonings.
  • Mix well.
  • Shape into patties.
  • In a large skillet heat oil.
  • Fry patties until golden brown on both sides.

  1. Very good zucchini cakes, i also halved the recipe. Left out the ham though.
     
  2. These were easily prepared, I halved the recipe which gave me seven nice cakes. Even though I had halved the recipe, I did need to use 2 eggs, the mixture seemed too dry to hold together without the second egg. Lots of flavour and good texture, these cooked very nicely, and we enjoyed them on a bed of white rice with creamed spinach to accompany. Thank you, good recipe, Hanka!!! Made for Oz/NZ PMMR tag game, Reunion edition.
